Vegetables are important to the human diet, and many studies have shown that a close relation exists between the intake of vegetables and cancer prevention. Vegetables particularly contain great quantity of antioxidants. The postharvest life of vegetables very short except root and bulb vegetable because of both endogenous and exogenous ethylene. Cold storage, packaging, controlled atmosphere storage and modified atmosphere storage used to delay ethylene effect to vegetables but was not enough. Also shelf life can be potentially regulated through the use of compounds that inhibit etlylene action. The gaseous ethylene antagonist 1-methylcyclopropene (1-MCP) appears to be an effective inhibitor of ethylene action at extremely low levels. Sebzeler; özellikle içerdikleri vitamin, mineral ve lifli maddeler ile insan beslenmesinde günlük olarak alınması gerekli önemli besin maddeleridir. Özellikle sebzelerde bulunan antioksidan maddelerin, kanser hastalığına karşı koruyucu etkisinden dolayı günümüzde önemleri daha da artmıştır. Sebzelerin hasattan sonraki ömürleri kök ve yumru sebzeler dışında oldukça kısadır. Bu sürenin azlığında sebzelerin ürettikleri etilenin yanında, bulundukları ortamdaki etilen kaynakları da etkilidir. Dolayısıyla sebzelerin raf ömrünü uzatmada etilenin etkisinin azaltılması gereklidir. Bu amaçla soğuk depolama, ambalajlama, kontrollü atmosfer depolama ve modifiye atmosferde depolama gibi değişik depolama teknikleri kullanılmakla birlikte, bu tekniklerin etkileri de çoğu zaman sınırlı kalmaktadır. Son yıllarda geliştirilmiş olan 1-metilsiklopropen (1-MCP), ürünlerde etilen bağlanma noktalarına bağlanarak, etilenin etkisini azaltabilmektedir. Bu çalışmada, sebzelerin etilen üretimleri ve 1-MCP'in sebzelerdeki kullanılabilirliği incelenmiştir.
