Mediterranean countries such as Spain, Italy, Greece and Turkey are the majority of world olive-oil production potential. Olive mill wastewater which originated from production process constitute an important environmental problem in the Mediterranean Sea due to seasonal and localized production, high and diverse organic load. In the treatment of olive oil mill wastewater that contains high concentration of organic matter, suspended solids, oil and grease, a number of different treatment methods have been developed and tested. In this study, it has been evaluated and summarized the studies done by chemical, biological and advanced treatment methods used in the treatment of olive mill wastewater in literature.

Dünya zeytinyağı üretimi ağırlıklı olarak İspanya, İtalya, Yunanistan ve Türkiye gibi Akdeniz ülkelerinde yapılmaktadır. Üretim prosesi sonrasında açığa çıkan zeytin karasuyu, yüksek kirletici özellikleri, mevsimsel ve bölgesel üretilmesi gibi sebeplerden dolayı, Akdeniz Bölgesi’nde önemli bir çevresel problem oluşturmaktadır. Organik madde, askıda katı madde, yağ ve gres içeriği oldukça yüksek olan karasuyun arıtımında, birçok arıtma yöntemi geliştirilmiş ve denenmiştir. Bu çalışmada, zeytin karasuyunun arıtımında kullanılan kimyasal, biyolojik ve ileri arıtma metotları kullanılarak literatürde yapılan çalışmalar değerlendirilmiş ve özet olarak sunulmuştur.
