The aim of this paper is to use of design of experiments to develop products and processes and to contribute to use it more commonly. In this work, the basic principles related to design of experiments is explained and 23 factorial design set up for food production sector has been constructed. After that, products have been cooked on hot own oven under different process conditions to study their effect on product weight.

Bu çalıĢmanın amacı ürün ve süreçlerin geliĢtirilmesinde deney tasarımını kullanmak ve yöntemin kullanımının yaygınlaĢtırılmasına katkıda bulunmaktır. ÇalıĢmada deney tasarımı hakkında temel bilgiler sunulmuĢ, 23 faktöriyel tasarımların kullanımına iliĢkin gıda sektöründe bir uygulama yapılmıĢtır. Isıl iĢlem ile farklı üretim koĢullarında piĢirilen ürünlerin ağırlığını etkileyen faktörler ve bunların uygun üretim düzeyleri belirlenmeye çalıĢılmıĢtır.
