ANTINUTRITIONAL FACTORS AND NUTRITIVE VALUES OF FOOD GRAIN LEGUMES

Food legumes are one of the important plant source of foods in human nutrition. They have very important advantages when compared with the other food sources of plant origin. There are some factors having positive or negative effects on nutritive value in food grain legume seeds. High protein and low oil content, vitamins, mineral elements and dietary fibers are positive nutritional and health-related components. Enzyme inhibitors, lectins, flatulence factors, polyphenols, tannins, phytic acid and saponins are also negative nutritional factors. In this paper, nutritive value of food grain legumes, antinutritional factors existing in legume seeds and their importance in human nutrition were reviewed.

Yemeklik tane baklagiller insan beslenmesinde önem taşıyan bitkisel kaynaklı besinlerden birisidir. Diğer bitkisel kaynaklı besinler ile karşılaştırıldıklarında besin değeri bakımından birçok üstünlüğe sahiptirler. Baklagil tohumlarında, besleyici değerleri üzerine olumlu veya olumsuz etkileri olan bazı bileşenler bulunmaktadır. Bunlardan yüksek protein, düşük yağ içeriği, vitaminler, mineral maddeler ve diyetsel lifler beslenme ve sağlık üzerine olumlu, enzim inhibitörleri, lektinler, gaz yapan faktörler, polifenoller, tanenler, fitik asit, saponinler gibi antibesinsel faktörler de olumsuz etkilere sahiptir. Bu makalede, yemeklik tane baklagillerin besleyici değerleri, baklagil tohumlarında bulunan antibesinsel maddeler ve bunların insan beslenmesi açısından önemleri gözden geçirilmiştir.
